After spending the week in southern California, I decided to take the plunge and go vegan. I was inspired by Rachel and the homemade vegan poptarts we made. It’s actually been pretty easy these past couple days. The first day was mostly cereal and other things that I can’t remember. Yesterday I made a polenta pizza with hummus, olives, seaweed, salad greens, and carrot ribbons. It was very tasty! I will update with a recipe and pictures later (I left my memory card reader in southern California). Today I made a sweet potato with homemade hummus. The hummus I made was absolutely divine and easy to make. I put a can of garbanzo beans, the juice of one lemon, a spoonful of tahini, salt, pepper, a teaspoon of garlic, and some sunflower oil and pureed it. I can’t wait to eat it on more things. Delicious!
I feel like this will lead me to eat healthier and become more inventine with my cooking instead of focusing everything around meat.
